Ingredients
- 250g all-purpose flour
- 50g icing sugar
- 120g cold unsalted butter
- 1 large egg
- 100g caster sugar
- 125ml fresh lemon juice
- 4 egg yolks
Instructions
- In a food processor, blend flour, icing sugar, and salt; add cold butter and pulse until crumbly. Mix in egg until combined. Wrap in plastic and chill for 30 minutes.
- Roll out dough on a floured surface to 3mm thick. Line tartlet pans and trim excess dough; chill again for 15 minutes.
- Preheat oven to 180°C (350°F). Bake lined shells with weights for 15 minutes, remove weights, then bake until golden (5-10 minutes). Cool completely.
- Whisk together egg yolks and caster sugar; stir in lemon juice and zest. Melt butter in a saucepan over low heat, then mix in the egg mixture until thickened.
- Pour lemon curd into cooled shells and chill for at least an hour before serving.
