  • 1 ball easy pizza dough
  • 5 oz fresh mozzarella cheese
  • 2 tbsp extra virgin olive oil
  • 1 tbsp water
  • 1 tbsp fresh parsley (chopped)
  • 1 small garlic clove (grated)
  • 1 tsp lemon zest
  • 1 tsp lemon juice
  • ¼ tsp fine salt
  • ¼ tsp black pepper
  • 2 tbsp grated parmesan cheese

Instructions

  1. Prepare the cheese by slicing fresh mozzarella into thick pieces; dab with paper towels if watery.
  2. Shape the dough on parchment paper to approximately a 9×13 inch rectangle.
  3. In a glass jar, combine olive oil, water, parsley, garlic, lemon zest, lemon juice, salt, and pepper; shake until well mixed.
  4. Make dimples in the dough and pour the brine evenly over it; top with mozzarella.
  5. Bake on a preheated pizza stone at 475°F for about 8-10 minutes until golden brown.
  6. Finish with a drizzle of lemon juice and sprinkle with parmesan and parsley before serving.
