  • 3 large egg yolks
  • 1 cup sugar
  • 2 tablespoons melted butter
  • 2 teaspoons lemon zest
  • 1/4 teaspoon salt
  • 1/3 cup fresh lemon juice (about 2 large lemons)
  • 5 tablespoons flour
  • 1 1/2 cups full-fat buttermilk
  • 3 large egg whites

Instructions

  1. Preheat your oven to 350°F (175°C). Butter a baking dish and place it inside a roasting pan filled with water halfway up the sides.
  2. In a mixing bowl, whisk together egg yolks, sugar, melted butter, lemon zest, salt, and lemon juice until combined.
  3. In another bowl, whisk flour and buttermilk together; then combine with the egg mixture.
  4. In a stand mixer, beat egg whites until soft peaks form. Gently fold into the custard mixture.
  5. Pour the custard into the prepared dish placed in the water bath. Bake for about 45 to 50 minutes until golden brown on top.
  6. Allow the custard to cool slightly before serving; dust with powdered sugar or pair with ice cream if desired.
