Ingredients
- 2 ripe mangoes, diced
- 1 avocado, diced
- ½ small red onion, finely sliced
- 1 small cucumber, sliced
- 1 cup coriander leaves, chopped
- ¼ cup crushed peanuts
- 3 tbsp sweet chilli sauce
- Juice of 2 limes
- 1 tbsp olive oil
- 1 tsp honey or maple syrup
- ½ tsp freshly grated ginger
- Sea salt flakes, to taste
- Cracked black pepper, to taste
Instructions
- In a bowl, whisk together sweet chilli sauce and lime juice until smooth. Stir in olive oil, honey (or maple syrup), ginger, salt, and pepper; set aside.
- In a serving bowl, layer diced mangoes at the bottom. Add cucumber slices on top followed by avocado and red onion. Finish with chopped coriander leaves.
- Drizzle the dressing over the salad and sprinkle crushed peanuts on top. Toss gently just before serving.
