  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup long-grain white rice
  • 1 can (15 ounces) black beans
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 2 cups chicken broth
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • Fresh cilantro and lime wedges for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add seasoned chicken and cook until browned, about 5-7 minutes. Remove from skillet.
  2. Toast rice in the same skillet for 1-2 minutes. Stir in black beans, diced tomatoes, chicken broth, and corn. Bring to a boil; reduce heat and cover to simmer for 18-20 minutes until rice is tender.
  3. Fluff rice with a fork; add cooked chicken and sprinkle cheese on top. Cover briefly to melt cheese.
  4. Garnish with cilantro and serve hot with lime wedges.
