  • 2 sheets store-bought pie dough
  • 1 large egg
  • 2 tbsp unsalted butter
  • 2 ½ cups finely chopped Fuji or Honeycrisp apples
  • ¼ cup light brown sugar
  • 1 tsp ground cinnamon
  • Juice of ½ lemon
  • ½ tsp cornstarch mixed with water
  • Granulated sugar and additional cinnamon for topping

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. Roll out the pie dough to your desired thickness and cut into shapes.
  3. In a saucepan over medium heat, melt butter and add chopped apples, brown sugar, cinnamon, and lemon juice until tender.
  4. Stir in cornstarch mixture to thicken the filling; let cool.
  5. Spoon cooled filling onto half of the dough shapes.
  6. Brush edges with egg wash, place another dough piece on top, and crimp edges to seal.
  7. Sprinkle tops with sugar and cinnamon mixture.
  8. Bake for 12-14 minutes until golden brown.
  9. Cool slightly before serving.
