  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon all-purpose flour
  • 1 egg, beaten (for egg wash)

Instructions

  1. Make the Pie Crust: Combine flour, salt, and sugar in a bowl. Blend in chilled butter until crumbly. Gradually add cold water until dough forms. Divide into two discs; wrap in plastic wrap and chill for at least 30 minutes.
  2. Prepare the Filling: Mix diced apples with sugar, cinnamon, nutmeg, lemon juice, and flour until coated.
  3. Roll Out the Dough: Preheat oven to 375°F (190°C). Roll out one disc to about 1/8 inch thick; cut out circles and place them in muffin tins.
  4. Assemble the Mini Pies: Fill each circle with apple mixture. Roll out the second disc for tops; seal edges well and brush with egg wash.
  5. Bake and Serve: Bake for 20-25 minutes until golden brown. Let cool slightly before serving.
