Ingredients

  • 8 large lemons (washed and sliced)
  • 1 cup sugar
  • 10 sprigs fresh mint
  • 2 sprigs fresh rosemary
  • ½ vanilla bean (or 2 tsp vanilla extract)
  • 8 cups cold water
  • Ice for serving

Instructions

  1. In a bowl with a fine-mesh strainer set over it, combine lemon slices, sugar, mint, rosemary, and vanilla seeds. Gently massage the mixture until the lemons release juice.
  2. Cover the bowl and refrigerate for at least 3–4 hours or overnight to allow the flavors to meld.
  3. When ready to serve, press the lemons through the strainer to extract all juice and discard solids. Transfer juice concentrate to a pitcher and add cold water; stir well.
  4. Serve over ice in tall glasses garnished with fresh mint or rosemary.
