Ingredients
- 2 boneless, skinless chicken breasts
- 1 onion, finely chopped
- 1½ cups jasmine rice
- Juice of 1 lemon
- 3 cups chicken stock
- Fresh thyme sprigs
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp sweet paprika
- 1 tsp dried thyme
- 1 tsp sea salt flakes
- ½ tsp cracked black pepper
- 3 tbsp olive oil
- ¼ cup (60 ml) water
- 1 tsp freshly minced garlic
- 2 tbsp unsalted butter
- Salt and pepper, to taste

Instructions
- Marinate sliced chicken breasts in olive oil, garlic powder, onion powder, paprika, thyme, salt, and pepper for at least 10 minutes.
- Heat a large deep pan over medium-high heat and sear the chicken for 1-2 minutes per side until browned but not fully cooked. Remove from the pan.
- Deglaze the pan with water; add onion and garlic, cooking until fragrant.
- Stir in butter and jasmine rice until well coated.
- Add lemon juice and chicken stock; bring to a boil. Return the chicken to the pan.
- Cover and cook on low for 15 minutes; let rest covered for an additional 10 minutes before serving.
