- 1 cup orzo pasta
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 medium lemon, zested and juiced
- 4 cups low-sodium chicken broth
- 2 tablespoons olive oil
- 2 cups fresh spinach
- ¼ cup freshly grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté chopped onion until translucent, about 3-4 minutes. Add minced garlic and cook for an additional 30 seconds.
- Season shrimp with salt, pepper, and oregano; add to the skillet. Cook until pink and opaque (about 2-3 minutes), then remove from skillet.
- In the same skillet, add orzo and chicken broth. Bring to a simmer; cook for about 10-12 minutes until orzo is tender.
- Stir in lemon zest, lemon juice, and spinach until wilted. Return shrimp to skillet; mix well.
- Serve garnished with Parmesan cheese and fresh parsley.
