Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium lemon, zested and juiced
  • 4 cups low-sodium chicken broth
  • 2 tablespoons olive oil
  • 2 cups fresh spinach
  • ¼ cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté chopped onion until translucent, about 3-4 minutes. Add minced garlic and cook for an additional 30 seconds.
  2. Season shrimp with salt, pepper, and oregano; add to the skillet. Cook until pink and opaque (about 2-3 minutes), then remove from skillet.
  3. In the same skillet, add orzo and chicken broth. Bring to a simmer; cook for about 10-12 minutes until orzo is tender.
  4. Stir in lemon zest, lemon juice, and spinach until wilted. Return shrimp to skillet; mix well.
  5. Serve garnished with Parmesan cheese and fresh parsley.
