  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 (28-ounce) can crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 8 ounces lasagna noodles (broken into pieces)
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil, for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Brown the Italian sausage.
  2. Add chopped onion and bell pepper; sauté until softened. Stir in minced garlic.
  3. Pour in crushed tomatoes and broth; add oregano, basil, salt, and pepper. Bring to a boil.
  4. Add broken lasagna noodles; reduce heat and simmer until tender.
  5. Stir in ricotta, mozzarella, and Parmesan until melted and creamy.
  6. Serve hot, garnished with fresh basil if desired.
