  • 4 large sweet onions (Vidalia or Walla Walla)
  • 4 cups vegetable or chicken broth
  • 1 tablespoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the onions by peeling and cutting off the tops and bottoms. You can leave them whole or cut them into quarters.
  2. In a large pot, combine the broth, salt, black pepper, garlic powder, onion powder, smoked paprika, and olive oil. Bring to a boil over medium-high heat.
  3. Add the onions to the boiling broth. Reduce heat to low and cover. Simmer for about 30-40 minutes until tender.
  4. Add fresh thyme leaves during the last 5 minutes of cooking for extra flavor.
  5. Carefully remove the onions from the pot and place them on a serving platter. Drizzle some broth over them and garnish with chopped parsley before serving.
