- 4 large sweet onions (Vidalia or Walla Walla)
- 4 cups vegetable or chicken broth
- 1 tablespoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Prepare the onions by peeling and cutting off the tops and bottoms. You can leave them whole or cut them into quarters.
- In a large pot, combine the broth, salt, black pepper, garlic powder, onion powder, smoked paprika, and olive oil. Bring to a boil over medium-high heat.
- Add the onions to the boiling broth. Reduce heat to low and cover. Simmer for about 30-40 minutes until tender.
