  • 7 to 9 pound beef brisket
  • 2 teaspoons minced garlic
  • 3 tablespoons fresh ground pepper
  • 1 teaspoon celery seed
  • 1 teaspoon ground ginger
  • 4 whole bay leaves, crumbled
  • One 12-ounce can tomato paste
  • 1 cup soy sauce
  • ½ cup Worcestershire sauce
  • 2 medium onions, thinly sliced
  • 3 tablespoons beer

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Lay two large pieces of heavy-duty aluminum foil on a flat surface.
  3. Place the brisket on the foil and rub minced garlic over it.
  4. In a bowl, mix pepper, celery seed, ground ginger, and bay leaves; season the brisket generously.
  5. Score the fat side of the brisket for better flavor absorption.
  6. Mix tomato paste, soy sauce, and Worcestershire sauce; rub it over the brisket.
  7. Add sliced onions on top and wrap the brisket tightly in foil.
  8. Place it fat side up in a roasting pan and cook for about 4 hours.
  9. Open the foil but keep it covered with onions; cook uncovered for an additional hour.
  10. Remove from oven, let rest for a few minutes before slicing thinly against the grain.
