  • 1 pound boneless skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper (adjust for spice preference)
  • 2 teaspoons minced garlic
  • 2 tablespoons lemon juice
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • ½ cup frozen peas (optional)

Instructions

  1. Marinate the chicken by mixing olive oil, salt, pepper, paprika, cayenne, garlic, and lemon juice in a bowl. Coat the chicken well and let it marinate for at least 30 minutes.
  2. In a pot, bring chicken broth to a boil. Add rice and reduce heat to low. Cover and simmer for 15-20 minutes until tender. Stir in frozen peas during the last 5 minutes if using.
  3. Preheat grill or grill pan over medium-high heat. Grill marinated chicken for about 6-7 minutes each side until fully cooked (internal temperature should be 165°F).
