  • 1 tablespoon olive oil
  • 2 store-bought flatbreads or naan breads
  • 1/2 cup pesto sauce
  • 1 cup mozzarella cheese
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup fresh basil leaves (chopped)
  • For garnish: 2 tablespoons fresh parsley (finely chopped)

Instructions

  1. Prepare the chicken by patting it dry and seasoning with salt and pepper. If uneven, pound to an even thickness.
  2. Heat olive oil in a skillet over medium-high heat. Sear the chicken for about 30 seconds on each side until cooked through (internal temperature of 165°F).
  3. Let the chicken rest before shredding it with two forks.
  4. Preheat your oven to 400°F.
