- 1/2 cup plain canned pumpkin
- 1/4 cup white sugar (for coating)
- 1 1/2 tsp ground cinnamon (for coating)
Instructions
- In a medium bowl, whisk together flour, cornstarch, cream of tartar, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a large bowl, beat together unsalted butter, brown sugar, and white sugar until light and fluffy. Lower the mixer speed and blend in the egg, vanilla extract, and canned pumpkin until well incorporated.
- Gradually mix the dry ingredients into the wet mixture on low speed until a sticky dough forms. Cover the dough with plastic wrap and chill it for at least 2 hours.
- Preheat your oven to 350°F (175°C). Line two baking trays with parchment paper or silicone baking mats.
- In a small bowl, combine 1/4 cup white sugar and 1 1/2 tsp cinnamon for coating.
- Once chilled, form the dough into balls about 1.5 tablespoons each. Roll each ball in the cinnamon-sugar mixture before slightly flattening them. Place on prepared trays about 2 inches apart.
- Bake for about 8–10 minutes until cookie tops appear just set. Allow them to cool briefly on trays before transferring them to a wire rack to cool completely.
