  • 4 cups shredded beef birria
  • 2 cups birria broth (consomé)
  • 16 thick corn tortillas
  • 1 pound Oaxaca cheese or Monterey Jack cheese, shredded
  • Diced red onions for garnish
  • Chopped cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Prepare the beef birria according to your favorite recipe. Keep the meat and broth warm.
  2. Preheat a large skillet over medium-high heat and lightly coat with cooking spray or oil.
  3. Dip each tortilla in the warm consomé, then place on the skillet. Cook for about 30 seconds per side until slightly crispy.
  4. On one half of each tortilla, add shredded cheese and shredded birria beef. Fold to form a taco.
  5. Cook for another 30–60 seconds until the cheese melts and the tortilla is golden brown. Repeat with remaining tortillas.
  6. Serve hot with garnishes and warm consomé for dipping.
