  • 8 ounces lo mein noodles
  • 1 pound large shrimp, peeled and deveined
  • 2 cups mixed vegetables (bell peppers, carrots, snow peas)
  • 3 cloves minced garlic
  • ¼ cup soy sauce
  • 1 tablespoon vegetable oil
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 teaspoon sesame oil
  • 2 green onions, sliced (for garnish)

Instructions

  1. Cook the lo mein noodles according to package instructions until al dente; drain and set aside.
  2. In a skillet or wok, heat vegetable oil over medium-high heat. Add shrimp and cook until pink (about 2-3 minutes). Remove from skillet.
  3. Sauté mixed vegetables in the same skillet for 3-4 minutes until tender-crisp. Add minced garlic and sauté for an additional 30 seconds.
  4. Mix soy sauce, optional oyster sauce, cornstarch, and water in a bowl. Pour into the skillet with vegetables and cook until slightly thickened.
  5. Return cooked noodles and shrimp to the skillet; toss to coat in the sauce and heat through for another minute.
  6. Serve garnished with sliced green onions.
