  • 1 pound boneless, skinless chicken breasts
  • 8 cups chicken broth
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 cup diced potatoes
  • Dried thyme and rosemary
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sear the chicken breasts for about 5-6 minutes per side until browned. Remove and set aside.
  2. In the same pot, sauté the onion, carrots, and celery for 5-7 minutes until softened. Add garlic and cook until fragrant.
  3. Pour in chicken broth along with thyme, rosemary, bay leaf, salt, and pepper; bring to a boil.
  4. Return chicken to the pot and reduce heat to simmer for about 20 minutes until fully cooked.
  5. Shred the chicken using two forks and return to the pot. Add green beans and potatoes; simmer for another 10-15 minutes until potatoes are tender.
  6. Adjust seasoning as necessary before serving hot garnished with fresh parsley.
