- ⅓ cup granulated sugar
- ⅓ cup unsalted butter, melted
- 8 ounces dark chocolate, chopped
- 1 cup heavy cream
- 1 cup granulated sugar (for caramel)
- 6 tablespoons unsalted butter (for caramel)
- ½ cup heavy cream (for caramel)
- 1 teaspoon sea salt (or to taste)
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, mix chocolate cookie crumbs, sugar, and melted butter until combined. Press into a tart pan and bake for 10 minutes; let cool.
- For the ganache, heat heavy cream until simmering. Pour over chopped dark chocolate in a heatproof bowl; let sit then stir until smooth. Mix in butter until fully incorporated.
- Pour ganache into the cooled crust and refrigerate for at least 2 hours to set.
- For the salted caramel, melt sugar over medium heat until amber; whisk in cubed butter and then heavy cream slowly until smooth. Stir in sea salt.
- Once ganache is set, pour the salted caramel over it and refrigerate for another 30 minutes before serving.
