  • 2 cups sharp cheddar cheese
  • 1 cup Gruyère cheese
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. Slice the russet potatoes into thin rounds using a mandoline.
  3. In a medium saucepan, combine heavy cream, whole milk, minced garlic, salt, and pepper; simmer for about 5 minutes.
  4. Layer half of the potato slices in the baking dish, pour half of the cream mixture over them, and sprinkle half of both cheeses. Repeat with remaining ingredients.
  5. Cover with aluminum foil and bake for 40 minutes; then remove foil and bake for an additional 20-25 minutes until golden brown.
