  • 1 cup corn (fresh or canned)
  • 1 red bell pepper, diced

  • ½ cup sour cream
  • Juice of 1 large lime
  • Hot sauce (1-2 teaspoons, use Franks)
  • ½ teaspoon chili powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon kosher salt

Instructions

  1. In a small bowl, whisk together the sour cream, lime juice, hot sauce, chili powder, cumin, and salt until smooth.
  2. In a large mixing bowl, combine shredded chicken, black beans, corn, red bell pepper, red onion, and cilantro.
  3. Pour the dressing over the salad ingredients and gently toss until evenly coated.
  4. Cover and refrigerate for at least one hour to allow flavors to meld.
  5. Serve chilled; garnish with fresh parsley if desired.
