  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, finely chopped
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 tablespoon lime zest
  • 1 teaspoon garlic powder

Instructions

  1. Season the flank steak with chili powder, cumin, smoked paprika, salt, and pepper. Rub it with olive oil to coat evenly.
  2. Preheat a grill or grill pan over medium-high heat. Cook the flank steak for about 6-8 minutes on each side until it reaches your desired doneness. Remove from grill and let it rest for 5 minutes.
