  • 2 tablespoons olive oil or unsalted butter
  • 2 pounds sweet onions (like Vidalia), thinly sliced
  • 1 cup apple juice or unsweetened apple cider
  • ½ cup apple cider vinegar
  • 1 cup honey
  • ½ cup brown sugar
  • 2 teaspoons minced garlic
  • 1 teaspoon coarse salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon dry mustard powder
  • 1 teaspoon crushed red pepper flakes (adjust to taste)

Instructions

  1. Peel and thinly slice the sweet onions until you have about 6 cups.
  2. In a large heavy-bottomed pot, heat oil or butter over medium heat. Add onions, apple juice, vinegar, garlic, salt, pepper, mustard powder, and crushed red pepper flakes. Cook for 5–7 minutes until softened.
  3. If using pectin for thickening, stir it in now and bring the mixture to a full boil.
  4. Add honey and brown sugar; return to a rolling boil for one minute while stirring.
  5. Remove from heat and skim off foam if necessary; let cool before storing.
