  • 12 ounces wonton wrappers
  • 1 cup fresh spinach, chopped
  • 14 ounces canned artichoke hearts, drained and chopped
  • 8 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a muffin tin with cooking spray or olive oil.
  3. Gently press each wonton wrapper into the muffin cups.
  4. In a skillet over medium heat, cook chopped spinach until wilted (2-3 minutes). Let cool.
  5. In a mixing bowl, combine spinach, artichokes, cream cheese, mozzarella, Parmesan, garlic, lemon juice, salt, and pepper. Mix until well combined.
  6. Spoon the filling into each wonton cup until nearly full.
