  • 20 jumbo pasta shells
  • 15 oz ricotta cheese
  • 3 cups fresh baby spinach
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 can (28 oz) whole peeled tomatoes
  • 1 tablespoon vodka
  • Fresh basil leaves
  • Olive oil, garlic, and seasonings

Instructions

  1. Cook the jumbo pasta shells in salted water until al dente; drain.
  2. For the sauce, sauté shallots and garlic in olive oil, add tomatoes and vodka, then simmer.
