  • 4 cups powdered sugar

  • 34 tablespoons heavy cream
  • 8 ounces bittersweet chocolate, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add in eggs, milk, vegetable oil, and vanilla extract. Beat with an electric mixer for 2 minutes.
  4. Stir in boiling water until smooth; pour batter into prepared pans.
  5. Bake for 30-35 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  6. For the frosting, beat softened butter until creamy; gradually add powdered sugar and peppermint extract to achieve a smooth consistency.
  7. Assemble the cake by spreading mint frosting between layers and over the top and sides.
  8. For ganache, melt chopped bittersweet chocolate with heavy cream until smooth; pour over the frosted cake.
