- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 2 teaspoons peppermint extract
- 3–4 tablespoons heavy cream
- 8 ounces bittersweet chocolate, chopped
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add in eggs, milk, vegetable oil, and vanilla extract. Beat with an electric mixer for 2 minutes.
- Stir in boiling water until smooth; pour batter into prepared pans.
- Bake for 30-35 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
- For the frosting, beat softened butter until creamy; gradually add powdered sugar and peppermint extract to achieve a smooth consistency.
- Assemble the cake by spreading mint frosting between layers and over the top and sides.
- For ganache, melt chopped bittersweet chocolate with heavy cream until smooth; pour over the frosted cake.
