  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mint chocolate kisses, unwrapped

Instructions

  2. In a medium bowl, whisk together flour, baking soda, salt, and cocoa powder; set aside.
  3. In a large bowl, cream softened butter with granulated and brown sugars until fluffy.
  4. Beat in eggs one at a time and mix in vanilla until smooth.
  5. Gradually combine dry ingredients with the wet mixture on low speed until just mixed.
  6. Scoop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes until edges are set; press a mint chocolate kiss into each cookie immediately after removing from the oven.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
