  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chopped pistachios
  • ½ cup white chocolate chips (optional)
  • ½ cup green sprinkles (for festive decoration)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. Mix in pistachio pudding until fully combined.
  5. In another bowl, whisk flour, baking soda, and salt; gradually add this to wet ingredients until just mixed.
  6. Fold in chopped pistachios and white chocolate chips if desired.
  7. Scoop rounded balls of dough onto prepared baking sheet about 2 inches apart; sprinkle with green decorations if using.
  8. Bake for 10-12 minutes or until edges are golden but centers remain soft.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
