  • 4 ounces bittersweet chocolate (chopped)
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract

  • 15 mint Oreo cookies (crushed)
  • 8 ounces cream cheese (softened)
  • 1 cup powdered sugar
  • ½ teaspoon peppermint extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper.
  2. Melt ½ cup of butter and chopped chocolate in a saucepan over low heat until smooth. Remove from heat and stir in granulated and brown sugars.
  3. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  4. Fold in flour until just combined, then pour into the prepared pan.
  5. Bake for 20-25 minutes until a toothpick comes out with moist crumbs. Cool completely.
  6. In a bowl, beat cream cheese until smooth; gradually mix in powdered sugar and peppermint extract, then fold in crushed mint Oreos. Spread over cooled brownie base.
  7. For the ganache, melt remaining butter with chocolate chips in intervals until smooth; pour over the mint layer.
  8. Chill for at least one hour before cutting into squares.
