  • ¼ cup granulated sugar
  • 1 large egg yolk
  • 23 tablespoons cold water
  • 1 ½ cups milk
  • 2 large egg yolks
  • ½ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • Fresh strawberries, thinly sliced
  • Edible rose petals (optional)

Instructions

  1. Prepare the tart crust by combining flour, salt, and sugar in a food processor. Add cold butter and pulse until crumbly. Mix egg yolk with cold water, then add to the flour mixture to form dough. Chill for 30 minutes.
  2. Preheat your oven to 350°F (175°C). Roll out the chilled dough, fit it into a tart pan, and prick the bottom with a fork. Bake for 15-20 minutes with pie weights, remove weights, then bake an additional 10 minutes until golden brown. Cool completely.
  3. For custard cream, heat milk until boiling. In a bowl, whisk egg yolks, sugar, and cornstarch; gradually mix in hot milk. Return to heat until thickened; stir in vanilla extract and cool.
  4. Whip heavy cream to soft peaks; fold into cooled custard cream.
  5. Assemble by pouring custard into the tart shell and topping with sliced strawberries and optional rose petals.
