  • 1 cup whole milk
  • 1 large egg
  • 2 pounds fresh strawberries, hulled and quartered
  • 1 ¼ cups sugar (for strawberries)
  • 1 ½ cups cold heavy whipping cream
  • 1 tablespoon sugar (for whipped cream)
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare fresh strawberries by hulling and quartering them. Mix with 1¼ cups sugar and let sit for about 30 minutes to create a syrup.
  2. Preheat your oven to 425°F (220°C).
  3. In a bowl, whisk together flour, baking powder, sugar, and sea salt.
  4. Mix cold milk and beaten egg in another bowl. Cut in cold butter into the dry mixture until crumbly; add the milk mixture gradually.
  5. Shape shortcakes by pressing dough into rounds or dropping spoonfuls onto a lined baking sheet. Bake for about 15 minutes until golden brown.
  6. Whip heavy cream with sugar and vanilla extract until soft peaks form.
  7. Once cooled, slice shortcakes in half horizontally, layer with strawberry syrup, whipped cream, and strawberries, then top with the other half.
