  • 6 bell peppers (any color)
  • 1 ½ pounds ground beef (90% lean)
  • 1 ½ cups cooked white rice
  • ½ cup onion (finely chopped)
  • 2 teaspoons garlic (minced)
  • 15-ounce can tomato sauce
  • 1 ½ cups mozzarella cheese (shredded)
  • 2 teaspoons olive oil
  • Salt and pepper to taste
  • ½ teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 350°F. Coat a baking dish with cooking spray.
  2. Prepare the peppers by slicing off the tops and removing seeds. Place them cut-side down in the baking dish with water at the bottom.
  3. Bake for 25 minutes covered with foil.
  4. Meanwhile, heat olive oil in a skillet over medium heat. Cook ground beef until browned, adding salt and pepper.
  5. Sauté onions until softened, then stir in garlic for an additional 30 seconds.
  6. Mix in cooked rice, tomato sauce, Italian seasoning, and half of the mozzarella cheese.
  7. Remove baked peppers from the oven and fill them with the beef mixture; top with remaining cheese.
  8. Cover again and bake for an additional 20 minutes; uncover for another 10 minutes until cheese is melted.
