  • ½ cup sour cream
  • 1 cup broccoli florets, steamed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon smoked paprika
  • ½ cup green onions, chopped
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  3. In a mixing bowl, combine cooked chicken with broccoli, cheese, sour cream, and half the green onions; mix well.
  4. Once potatoes are cool enough to handle, slice them lengthwise and scoop out some flesh to create space for the filling.
  5. Fill each potato with the chicken mixture and bake for an additional 10 minutes or until heated through. Garnish with remaining green onions and parsley before serving.
