  • 2 cups sugar
  • 6 cloves garlic, minced
  • 2 teaspoons fresh jalapeño, chopped (adjust for desired heat)
  • 2 teaspoons red pepper flakes
  • 2 teaspoons parsley, chopped

Instructions

  1. Drain the pickles and discard the juice; slice them into ¼ to ½ inch pieces.
  2. Layer the sliced pickles in a large jar with 1½ cups of pickles per layer, topping each with ½ cup of sugar, 2 cloves of garlic, ½ teaspoon of red pepper flakes, and jalapeño.
  3. Repeat the layering until all ingredients are used, pouring any remaining sugar on top.
  4. Cover the jar and let it sit on the counter for about an hour until the sugar begins to liquify.
  5. Mix thoroughly by stirring or shaking the jar; let it sit covered for several more hours or overnight.
