  • 1 can (15 ounces) butter beans, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C). Thoroughly wash and dry the sweet potatoes. Pierce each potato several times with a fork.
  2. Place the sweet potatoes on a baking sheet and roast for about 45-50 minutes until tender when pierced with a knife.
  3. In a medium bowl, mix butter beans, olive oil, garlic powder, smoked paprika, salt, black pepper, and red pepper flakes (if desired). Toss to coat evenly.
  4. Spread the butter bean mixture on another baking sheet in a single layer and bake for about 15-20 minutes until golden and crispy, stirring halfway through.
  5. Once the sweet potatoes are done roasting, slice them open lengthwise and fluff the insides with a fork. Top generously with crunchy butter beans. Drizzle with lemon juice and garnish with freshly chopped parsley before serving warm.
