  • 1 cup plain yogurt
  • 2 tablespoons vegetable oil
  • 2 tablespoons lemon juice
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons garam masala
  • 1 teaspoon smoked paprika
  • 1 teaspoon turmeric
  • 1 teaspoon cayenne pepper (to taste)
  • 1 teaspoon salt
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 pound boneless chicken thighs, cut into 1-inch pieces

Instructions

  1. In a mixing bowl, combine yogurt, vegetable oil, lemon juice, and spices (cumin, coriander, garam masala, smoked paprika, turmeric, cayenne pepper, salt) along with minced garlic and grated ginger. Mix well to form a marinade.
  2. Add chicken pieces to the marinade and coat thoroughly. Cover and refrigerate for at least one hour or overnight for enhanced flavor.
  3. Preheat your grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes.
  4. Assemble the skewers by threading marinated chicken pieces onto them with space in between for even cooking.
  5. Grill skewers for approximately 12–15 minutes, turning occasionally until chicken is cooked through and charred on the edges.
  6. Let skewers rest for a few minutes before serving with garnishes like fresh cilantro and lemon wedges.
