  • 1/3 cup soy sauce
  • 1/3 cup mirin (sweet rice wine)
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch (for thickening)
  • Cooked rice (for serving)
  • Sesame seeds and green onions (for garnish)

Instructions

  1. Marinate the chicken by whisking together soy sauce, mirin, brown sugar, rice vinegar, ginger, and garlic in a bowl. Add chicken thighs and coat evenly. Cover and refrigerate for at least 30 minutes.
  2. Preheat a skillet over medium-high heat. Remove chicken from the marinade (reserve marinade) and cook for about 5-7 minutes on each side until golden brown. Let rest before slicing.
  3. In the same skillet, bring reserved marinade to a boil, then simmer. Mix cornstarch with water to create a slurry; add it to the sauce until thickened.
  4. Toss sliced chicken in the sauce and serve over rice. Garnish with sesame seeds and green onions.
