  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups vegetable or chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • ½ cup heavy cream (optional)
  • Fresh basil leaves for garnish

  4. Return soup to the pot (if using a regular blender) and stir in heavy cream if desired. Season with salt and pepper to taste; warm gently over low heat.
