Ingredients
- 9 lasagna noodles
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 large bell pepper, chopped
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 can (14 ounces) diced tomatoes with green chilies
- 2 cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1 tablespoon taco seasoning
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Cook lasagna noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, add olive oil. Sauté onion and garlic until translucent (3-4 minutes). Add bell pepper, black beans, corn, diced tomatoes, taco seasoning, cumin, salt, and pepper; simmer for about 5 minutes.
- In a prepared baking dish, layer vegetable mixture on the bottom. Place three noodles on top followed by mozzarella cheese. Repeat layers two more times and finish with vegetable mixture topped with cheddar cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10-15 minutes until cheese is bubbly and golden.
- Let cool for a few minutes before slicing; garnish with fresh cilantro.
