  • 4 slices bacon (cooked and crumbled)
  • 1 small onion (diced)
  • 2 cloves garlic (chopped)
  • 1/4 cup apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon grainy mustard
  • Salt and pepper (to taste)
  • Fresh parsley (for garnish)

Instructions

  1. Boil cubed potatoes in a large pot of salted water until tender, about 10 minutes. Drain and set aside.
  2. In a large pan over medium heat, cook the bacon until crispy. Remove bacon and reserve 2 tablespoons of grease.
  3. Add diced onion to the pan with reserved bacon grease and sauté for about 5 minutes until tender.
  4. Stir in chopped garlic and cook for an additional minute until fragrant.
  5. Pour in apple cider vinegar, both mustards, and season with salt and pepper; mix well.
  6. Add boiled potatoes and crumbled bacon to the pan; toss gently to coat everything evenly. Serve warm garnished with fresh parsley.
