  • 9 lasagna noodles
  • 15 ounces ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cups fresh spinach
  • 1 cup kale
  • 8 ounces sliced mushrooms
  • 2 cups white sauce (béchamel)
  • 4 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Cook noodles according to package directions until al dente; drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Sauté mushrooms until golden, then add garlic, spinach, kale, salt, and pepper until wilted. Remove from heat.
  3. In a bowl, mix ricotta with half the mozzarella, Parmesan, egg, oregano, and red pepper flakes until smooth.
  4. Preheat oven to 375°F (190°C). Spread white sauce in a baking dish. Layer noodles, ricotta mixture, sautéed veggies, and more sauce—repeat layers twice. Top with remaining noodles and white sauce mixed with leftover mozzarella.
  5. Cover with foil and bake for 25 minutes; uncover and bake for an additional 15 minutes until bubbly.
