- 9 lasagna noodles
- 15 ounces ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 3 cups fresh spinach
- 1 cup kale
- 8 ounces sliced mushrooms
- 2 cups white sauce (béchamel)
- 4 cloves garlic
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 large egg
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Cook noodles according to package directions until al dente; drain and set aside.
- In a skillet, heat olive oil over medium heat. Sauté mushrooms until golden, then add garlic, spinach, kale, salt, and pepper until wilted. Remove from heat.
- In a bowl, mix ricotta with half the mozzarella, Parmesan, egg, oregano, and red pepper flakes until smooth.
- Preheat oven to 375°F (190°C). Spread white sauce in a baking dish. Layer noodles, ricotta mixture, sautéed veggies, and more sauce—repeat layers twice. Top with remaining noodles and white sauce mixed with leftover mozzarella.
