  • 10 cups Granny Smith apples, peeled and sliced
  • 1 tablespoon lemon juice
  • 1 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter, cut into small pieces
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (for topping)

Instructions

  1. Prepare the crust: Mix flour, salt, and sugar in a bowl. Cut in cold butter until crumbly. Add ice water gradually to form dough. Wrap in plastic and refrigerate for at least one hour.
  2. Prepare the filling: Toss apple slices with lemon juice, sugar, cinnamon, nutmeg, and flour in another bowl.
  3. Preheat oven to 425°F (220°C). Roll out one dough disc into a circle and fit it into a pie pan. Fill with apple mixture and dot with butter.
  4. Roll out the second disc for the top crust; seal edges and cut slits for steam vents. Brush with egg wash and sprinkle coarse sugar on top.
  5. Bake at 425°F (220°C) for 15 minutes; reduce temperature to 350°F (175°C) and bake an additional 30-40 minutes until golden brown.
