  • 4 medium zucchinis
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • 1 egg, beaten
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 24 ounces marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips. Lightly salt them and let sit for 10 minutes to release moisture, then pat dry.
  3. In a mixing bowl, combine ricotta cheese, Parmesan cheese, beaten egg, basil, parsley, garlic powder, salt, and pepper.
  4. Spread the ricotta mixture onto each zucchini strip and roll tightly. Place seam-side down in a baking dish.
  5. Pour marinara sauce over the rolls and sprinkle with mozzarella cheese.
  6. Cover with foil and bake for 25 minutes; remove foil and bake for an additional 10-15 minutes until bubbly.
